Which Chilli varieties would be best to grow to help my Thai cookery? ?

Which seed varieties are used most in Thai cookery? I live in the UK and have a unheated greenhouse. I have grown several varieties if chilli in the past like Tom Long, Apache and Hot Wax but supermarket chillis are just labelled as Thai – no variety named. Do you know what they may be?

If you can find seed for “small bird chilli” that would be a perfect variety for you to use for Thai cooking..
